Slow Cooker Round Steak Fajitas with Veggies

Ever wonder what to make with the round steak that comes with a cow that you get from the locker?

We had stacks of round steak building up in our deep freezer until my husband manage to salvage a recipe-gone-bad into a steak fajita with grilled peppers and onions. I was excited to find a way to enjoy the round steak and took it a step further by cooking the veggies in the slow cooker with the steak. It feels like a win when I can cut back on the amount of dishes I need to wash in the evening.

The steak on its own can be somewhat bland, so we load the fajitas with hot sauce, salsa, avocado, etc. Our kids actually prefer the blandness and will eat these as deconstructed fajitas with cut steak, fresh pepper slices, and tortillas with avocado.

Ready to get started?


Step 1: Wash your hands with soap and warm water. Gather your ingredients:

  • 2 pounds round or flank steak

  • 1/4 cup apple cider vinegar, divided

  • 1 1/2 cups apple juice or wheat beer, divided

  • 1 jalapeno, seeded and sliced

  • 2 Tablespoons chili powder

  • 1 1/2 teaspoons garlic powder

  • pinch of crushed red pepper

  • salt & pepper, to taste

  • 3 bell peppers, sliced (I like to use green, red, and orange)

  • 1 large onion, sliced

  • Tortillas (optional)

  • Toppings, such as shredded spinach or kale, salsa, avocado, hot sauce, etc.)

Step 2: In a large bowl or plastic bag, add steak, 2 Tablespoons vinegar, and ¾ cup apple juice or beer. Cover bowl or seal plastic bag and marinate in a refrigerator overnight or for at least 2 hours. (Wash hands after touching raw meat)

Step 3: Place steak in a slow cooker and discard marinade. Wash hands and counters after touching raw meat.

Step 4: In a medium sized bowl, add the remaining 2 Tablespoons vinegar, remaining ¾ cup apple juice or beer, jalapeno, chili powder, garlic powder, red pepper, salt, and pepper. Whisk to combine.

Step 5: Pour seasonings over the steak in slow cooker. Cook on low for 3-4 hours.

Step 6: Add sliced bell peppers and onion on top of meat in slow cooker.

Step 7: Cook on low heat for 1-2 more hours, or until internal temperature of steak reaches 145°F with a food thermometer.

Step 8: Remove veggies from slow cooker. Slice steak into strips. Serve with tortillas (optional) and toppings, such as sliced spinach or kale, salsa, guacamole, or hot sauce.
